Our Story
Bringing Authentic Cajun Cuisine to the Heart of Knoxville
Château du Roux was founded as a tribute to family, resilience, and the power of giving back. Inspired by my mother’s lifelong passion for cooking and our deep Cajun roots, this venture was built to share authentic Louisiana flavors while making a tangible difference in people’s lives. The name Château du Roux means “House of Roux”, a tribute to the rich, slow-cooked base at the heart of Cajun cuisine—just as this company is built on tradition, passion, and community.
My mother spent years perfecting authentic Cajun recipes, crafting dishes that carried the warmth and tradition of generations before her. Her dream was always to bring people together through food, and Château du Roux is a way to honor that dream.
But food also represented survival. As a child, I remember standing in food bank lines, receiving Second Harvest handouts, and experiencing food insecurity firsthand. Later, I watched friends struggle with homelessness due to economic hardship, reinforcing a lesson I learned early: Success means nothing if it isn’t shared.

I knew I wanted to build something bigger than just a restaurant—something that uplifts others, just as people once did for me. Château du Roux is more than a business; it’s a mission-driven venture committed to preserving our Cajun heritage, bringing people together through food, and giving back to those who need it most.
With this in mind we focused our efforts into 3 core values our company will uphold.
Authenticity – Every dish at Château du Roux stays true to Cajun tradition, using handcrafted spice blends, locally sourced ingredients, and traditional cooking techniques that honor Louisiana heritage.
Sustainability – We prioritize eco-friendly packaging, responsible sourcing, and community reinvestment, ensuring long-term growth that benefits both the business and the environment.
Community Impact – Château du Roux is built on the belief that success should be shared. Our transitional housing initiative reinvests a portion of profits to help individuals in need secure stable housing and job opportunities.
